Yacón Root

The yacón root is the symbol of an earth that can give life even in the driest moment. The chasquis — the swift messengers — did not even have to cook the tuber. It was dug up, the earthy skin pulled off, and one bit into the crisp, juicy flesh, which tastes like a refreshing mix of apple, melon and pear. It is like drinking straight from a deep, cool spring hidden below the ground.
